Slice or dice:
1 pound/ 12 ounces cooked beets (about 3 cups)
Stir in the top of a double boiler until smooth:
½ cup sugar
½ cup cider vinegar or dry white wine
1 tablespoon cornstarch
½ teaspoon salt
2 whole cloves
Cook over simmering water, stirring, until clear. Add the beats and let them stand over the hot water, off the heat, for about 30 minutes. Just before serving, reheat the beats until just heated through, and add:
1 tablespoon butter
And:
1 tablespoon orange marmalade
Or
½ teaspoon cider vinegar
