Greek Salad Dressing

 

Ingredients:

  • 6 tablespoons extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic minced
  • 1 teaspoon dijon mustard
  • 1 tablespoon fresh chopped oregano or 1 teaspoon dried
  • salt and freshly ground black pepper to taste

Preparation:

  1. Place all ingredients in a mason jar, cover, and shake vigorously until emulsified. If you prefer to use a food processor, add the oregano after processing the dressing.

  2. Toss with your favorite salad and enjoy!

Garlic Salad Dressing

 

Ingredients:

  • 1 tablespoon apple cider vinegar
  • 2 tablespoon grated Pecorino Romano Cheese
  • 2 large cloves of garlic crushed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoons Italian seasoning
  • 10 turns freshly ground black pepper
  • pinch crushed red pepper flakes
  • 3 tablespoons extra virgin olive oil

Preparation:

  1. Combine all ingredients except olive oil in a small bowl. 
  2. Using a small whisk or fork, mix until combined and continue whisking while you slowly pour in olive oil.
  3. Refrigerate until ready to use. Serve over your favorite salad and Enjoy!

Grilled Orange Salad With Balsamic Beet Dressing

Ingredients:
4 cups arugula leaves, rinsed and drained shopping list
2 large oranges
4 oz gorgonzola, crumbled
1 c toasted almonds
No stick cooking spray

1 med-large beet, peeled
1 tbsp balsamic vinegar
Freshly cracked black pepper
olive oil
Preparation:
Cut each orange into 8 even wedges and remove as many seeds as possible.
Spray your grilling surface with no stick spray and heat to medium-high heat. Place orange wedges on grill and allow to grill until golden and lightly charred, about 2 minutes. Flip and repeat for second side of wedge.
Evenly divide arugula among four salad plates. Top with crumbled gorgonzola and toasted almonds. Top with warm, grilled orange wedges.
Drizzle lightly with balsamic beet dressing and serve.

For dressing:
Preheat oven to 400. Drizzle a sheet of aluminum foil with olive oil and place beet in oil. Fold foil over to make a pocket and seal edges. Allow beet to roast 35-45 minutes or until easily pierced with a knife.
Allow beet to cool slightly and cut into chunks. Place chunks in blender, along with balsamic vinegar, and puree until smooth.
Slowly stream in olive oil until desired consistency is reached. Season with fresh cracked black pepper and use immediately, or store in fridge for up to two weeks.

Sweet and Tart Beet Dressing

Ingredients:
1 cup of chopped up beets (about 1 large beet)
½ yellow onion, chopped
2 tbsp of honey
1 clove of crushed garlic
2 tbsp apple cider vinegar
½ cup of plain fat free Greek yogurt
Preparation:
Place all of the ingredients into your food processor and puree until the mixture is smooth.

Daikon Radish Dressing


3/4 c soy sauce
7/8 c rice wine vinegar
1/4 c grated ginger (this time the ginger was much too fibrous to get it through our garlic press so we chopped it by hand
2.5 T garlic (approx 6 cloves)
1/2 c grated daikon radish (this goes nicely through the garlic press and gets out the rest of the garlic from the press, it is very liquidy when you press it so do it right over the dressing container) (approximately 2 to 2.5 inches of daikon before grating)
a small amount of  sesame oil  (canola used for the taste testing this week, for allergy concerns)

White miso can be substituted for soy sauce. This recipe will be sampled during the pick up on Tuesday and Friday, thanks to shareholder Tanya Rotenberg. Enjoy!

Sweet Pepper French Dressing

Ingredients
2 cups sugar
2 ½ tsp salt
2 ½ tsp ground mustard
2 2/3 cup vegetable oil
2 2/3 cup cider vinegar
2 finely chopped green peppers
2 jars pimentos, chopped
21/2 tsp grated onion
In a large bowl combine sugar, salt, mustard, oil and vinegar. Stir in green peppers, pimentos and onions.
