1T oil
1 medium onion, chopped
2-3 cloves garlic, minced
1 medium tomato, diced (optional)
1/2 t ground coriander
1/2 t ground cumin
1/4 t salt or to taste
1/8 t ground cloves
1 lb kale or collards, (I used turnip greens)
1/2 c water
2-3 T chunky peanut butter (or lots, lots more)
1-2 t hot water, use water from greens
Saute onion and garlic in oil. Add tomato and simmer 2-4 minutes. Add spices, cook and stir for 2 minutes. Add greens and water and steam until greens are soft but not mushy. Stir to coat greens with spices. Combine peanut butter and hot water and add to greens at end of cooking time.
